Cabra de Rasquera
This race has its last stronghold in the south of Tarragona, and is named Rasquera in honour of the municipality where it has been best preserved. It is probably the Celtiberian white goat population that lives closest to the sea. It is highly prized for the compact texture and intense taste of kid meat, and for the quality of its `crestons´ - the kids castrated and fattened for 12-18 months. The usual consumption of the meat is pickled. The production is quite seasonal: it is concentrated in the autumn to sell the kids for Christmas.
